Crispy Smashed Potatoes


I found this recipe through Pinterest and it is from the blog Caramel Potatoes.  They take awhile but if you have the time they are well worth the wait!




Preheat oven to 500degrees. Place one rack at the top of your oven and the other at the bottom.
First you need red skinned potatoes or any smaller potato that you would like.  Wash and dry them then lay them on a cookie sheet with space inbetween for smashing later!  Then put 3/4 cup of water in the cookie sheet and cover with foil.  Bake for 30 minutes.

Next, take the potatoes out and let cool for 10 minutes.  Then you will place in a bowl and coat the potatoes with 3-6 tablespoons of olive oil.  Depends on how many potatoes you use.  Just make sure they are coated well.   

Then lay them back on the cookie sheet and find yourself a nice cup for "smashing".  I put the cookie sheet on the counter to do this part and placed pot holders under just to protect counter from heat. Then you place your cup over each potato and "smash" the potato down!

It looks like this!  Then you can season your pototoes to your liking.  I used a little bit of Johnny's seasoning, onion poweder and thyme.  I then topped the potatoes with some oil with a sylicone brush. Place the pototoes back in the hot oven, top rack, for 15 minutes, uncovered.  Then move to the bottom rack and continue to bake another 20-30 minutes, until a nice golden brown.  

The finished product! They are crispy all around and soft and moist on the inside!  They were really good with our steak and asparagus dinner!
